I started going to the gym this week and all I’ve been craving are vegetables! I searched around the web to find a good recipe and I couldn’t find one that I loved. I’m proud to say that I created this one myself!
Recipe: Cucumber and Red Onion Salad |
- 2 Large Cucumbers
- 1 Red Onion
- 2 Garlic Cloves
- 2 Tbsp Rice Wine Vinegar
- 1/4 Cup Canola Oil
- Salt and Pepper
- Peel the cucumber then slice into 1/4 inch slices. Then cut into quarters and put in a bowl. This will be the bowl that the final salad sits in. Set aside
- Slice red onion thin and break apart into pieces. Set aside
- Push garlic through a garlic press into a small bowl
- Add rice wine vinegar and oil to garlic. Whisk together.
- Add onion to the bowl with cucumber. Mix in the dressing. Salt and pepper to taste.
- Put in the refrigerator for at least 30 minutes before serving.
This was really easy to make and is really yummy! I think it should be consumed within 24 hours or it may get soggy!
